Marsala Carrots

Trying to get more vegetables in your diet – or your family’s? Make sure you cook and season them well.

A 2015 study showed that 91 percent of Americans did not eat the daily recommended amount of vegetables. As a follow-up, a team of researchers from the University of Illinois recently released a new study that proved Americans are more likely to eat vegetables when cooked correctly.

The study presented participants with seasoned and unseasoned steamed broccoli, green beans and carrots. Diners chose the steamed, seasoned vegetables over the unseasoned ones, although some didn’t like the particular seasoning. The bottom line: Consumers will eat more vegetables if they taste good.
